We were inspired to make this jam when a neighbor mentioned eating lots of ginger jam as a child growing up in Japan.  When the neighbor tested the jam for us, they informed us the entire jar was devoured in 2 days!  (We live for feedback like that). With a hint of spicy ginger and the sweetness of peaches, this is a wonderful springtime addition to have on hand.
 
Spread 'em on: Swirl a tablespoon or two into plain greek yogurt or spoon over some grilled pork chops!
